Quick Guide: Breakfast Toast

Breakfast toasts are a simple way to get a quick, healthy, hearty, and flavorful breakfast on a weekday. By now everyone has had avocado toast at least once, but a breakfast toast with eggs and/or vegetables is more substantial and is a great way to get the vegetables in your box onto your breakfast plate. The recipe concept is simple - a piece of toast, your favorite spread, a fried or hard-boiled egg and some greens, or roasted/grilled/raw vegetables on top. Below are some variations that might inspire you.

Spring Garlic Hummus, Roasted Vidalia, and Spicy Microgreens Egg Toast

Toast a slice of Multigrain Bread and spread with Spring Garlic Hummus then top with Roasted Vidalia petals. Put into a toaster oven to heat hummus and onion. Meanwhile, fry an egg, seasoning it with kosher salt, smoked paprika and cracked black pepper on both sides. Remove toast from toaster oven and top with egg and microgreens (I love Aerofarm's mustard and arugula microgreens, pictured above).

Avocado Egg Toast with Arugula, Scallions and Spring Garlic

Toast two slices of a crusty white bread or section of a baguette split open (if using something gluten free you may want to spread it with olive oil as they can be dry). In a bowl, mash an avocado with 1/2 tsp lime, 1/4 tsp diced spring garlic (green tops only), and 1/4 tsp kosher salt. Stir in 1 tsp sliced scallions (green tops only). Fry two eggs with salt, pepper and smoked paprika (break the yolk, or use hard boiled egg if you prefer) and then cut into sections to fit the bread. Top bread with avocado mixture, slices of fried egg, and baby Arugula.

Slow Roasted Tomato and Vidalia Egg Toast with Fresh Basil

Toast a slice of your favorite bread (I often use a sourdough) and top with slow roasted tomatoes. You can mash them with a fork on the toast but I often leave them as-is. Scramble 2 eggs with one chopped wedge of roasted Vidalia and 2 chopped leaves of fresh basil, and spoon them over toast.

Avocado and Radish Toast

This one is the simplest and one of my favorites. Simply mash some avocados with a spritz of fresh lime juice, top with thinly sliced radishes, and sprinkle with Fleur de Sel (or your favorite finishing salt) and cracked pepper. Easy and delicious.

Avocado Egg Toast with Cilantro Pesto, Tomatoes and Scallions

Toast two thick slices of bread. Mash avocado with salt and spread on bread. Dot with slices of boiled egg and sprinkle with salt and smoked paprika. Drizzle with cilantro pesto (recipe here - you can also buy it from the store) and dot with dices tomatoes and scallions.

Smoked Salmon Egg Toast with Ricotta, Scallions and Spicy Microgreens

Toast a crusty french bread, like a baguette split open. Spread with ricotta (Kite Hill makes a dairy free version) and a tablespoon of sliced scallion greens. Top with a fried egg and microgreens.

Avocado, Lime and Garlic Scape Egg Toast

Mash together 1 avocado, 1 inch of a garlic scape chopped fine, and 1 wedge of lime. Spread over a multigrain toast and top with an egg fried with salt, onion powder and smoked paprika and your favorite microgreens.
